Mandarin Orange Salad

  • Romaine lettuce (or spinach)
  • 1 cup sliced or slivered almonds
  • 1/2 cup sugar (separated)
  • 1 cup vegetable oil
  • 1/4 cup vinegar
  • 6 scallions thinly sliced
  • 1 tsp salt
  • t Tbs parsley
  • dash brown pepper
  • dash red pepper
  • 22 oz can mandarin oranges, chilled & drained
Wash lettuce and tear into bowl
Combine almonds and 1/4 cup of sugar in saucepan
Stir over medium heat until sugar browns & coats almonds.
Cool and break into piece.
Set aside

Combine remaining ingredients EXCEPT greens and oranges in bottle (or bowl) and mix well.

Just before serving toss everything (greens, oranges and dressing) together. **This recipe makes a lot of dressing. I suggest tossing the greens and oranges with half the dressing first and only if you think you need more adding the rest.**
