Agua Frescas

Believe it or not, we got this recipe from Southern Living who got it from Maria Corbalan, owner of Taco Xpress in Austin, Texas.

  • 4 cups Watermelon, cantaloupe or honey dew melon (Watermelon is our favorite)
  • 1/4 cup sugar (I use a little less, the fruit is pretty sweet as it is)
  • 2 cups cold water
Process 4 cups cubed fruit and 1/4 cup sugar in a blender until smooth, stopping to scrape down the sides as needed.
Pour mixture through a fine wire-mesh strainer into a pitcher, discarding the solids. (This part was pretty cool to do - in the blender everything looks liquefied, but you see all the pulp that is left when you strain it - and it makes for very clear liquid)
Stir in 2 cups cold water.
Cover and chill until ready to serve
Serve over ice
