Egg salad

  • Peeled hard boiled eggs (this is a fun way to shell an egg)
  • Mayo
  • Carrots
  • Scallions
  • Salt & Pepper to taste
Mash the hard boiled eggs in bowl (you can use an egg chopper if you have one otherwise, a fork will wok just fine)
Add the mayo a little at a time until you get the consistency / taste you want
Grate some carrots and put them in the egg salad (if you love carrots add more, otherwise, just add enough for a ice splash of orange color)
Chop the scallions and add them to the egg salad
Add salt and pepper to taste (I don't add any salt and pepper - instead, I put it on the table and let my guests choose their amount)
