Eggplant Parmesan

Another mom special! It's delicious!!

  • Eggplant
  • Breadcrumbs
  • Parmesan Cheese
  • Garlic
  • Salt
  • Pepper
  • Mozzarella Cheese

Peel the eggplant and slice it so that you get circles.
Fry the eggplant in olive oil (or grill it)
Mix the Parmesan cheese with the breadcrumbs and season with minced garlic, salt and pepper
Put a small amount of spaghetti sauce on the bottom of a glass pan
Top with one layer of fried eggplant
Top with a layer of breadcrumbs
Repeat until you have no more eggplant or breadcrumbs
Top with Mozzarella Cheese

Bake for 30 minutes at 350 degrees F.
